Still suffering from the creepy, crawly ick, but I feel that I might just live.  I missed my kitchen so much that this morning I made MUFFINS!  Not just any muffins, but my mom’s recipe that is found in her 1950 Betty Crocker’s Picture Cook Book.  This is an amazing book for beginning bakers as it shows step by step how to’s.  I was happy that they reprinted it and started selling it again.  In fact, I know that not only I bought it, but also both of my older sisters bought it too.  When my three ninja monkey helpers leave the nest, I plan on buying them copies of this book to take with them.  That book is special.  (But now I need to figure out what cookie in there is a Four O’clock as none of the recipes say that at all and Mom says that is the base cookie for the peanut butter sandwich cookie she makes and she said that is where the recipe is.  *le sigh*)


So onto the food, woman.  (My African zombie marmots in dog clothing call me that every morning that they wish pancakes.)


Sweet Muffin Base

1/2 c sugar

1 1/2 c flour

2 t baking powder

1/2 t salt

Mix these together well as the faster muffins come together with less stirring, the more tender they will be.

1/2 c milk

1/4 c melted shortening

1 egg

Mix these together as well.

Add the wet to the dry and lightly stir until you just get a lumpy batter.  I add my extras in a bit before it all comes together to cut down on the mixing time.  Extras can be whatever you wish as long as you just use one cup.  I used chocolate chips for one batch and blueberries for the other.  I have made them with blackberries and raspberries as well.  Yummy.

Bake at 400 degrees for 18 to 22 minutes and you are done.
