Oatmeal Scotchies or If You Are K.A. Stewart, You Should Stop Here

K.A. Stewart is a brilliant author who just happens to be one of my very best friends.  I take a yearly sabbatical to visit her to talk about her writing (aka “have fun and be crazy”).  For about five or six years, I have have been one of her Alpha Betas (aka “I get to look at stuff she writes” *sticks out tongue*).  For about the same amount of time, I have been sending her miniscule, teensy, weensy boxes of cookies and other stuff at Christmas.  I lurves her, her family, and each of her wonderful friends (who I hope someday read my post *nudge nudge*).  I imagine she might even just share the goodies with them.  She should not read this blog because it not only has the recipe for Oatmeal Scotchies, but it also has pictures of them.  Supposedly, they are her favorite cookie that I make.  (Admittedly, she has stated in print that having me many states away is better for her waistline.)  To endure this post might be considered torture and I would hate to torture her.  Maybe.

 

So here is the recipe!

 

Oatmeal Scotchies

Preheat oven to 375 degrees.

Mix together:
1 ¼ c. flour
1 t. baking soda
½ t. cinnamon
½ t. salt

Dry Ingredients

Beat together:
1 c. butter
¾ c. sugar
¾ c. brown sugar
2 large eggs
1 t. vanilla

Adding the Eggs and the Vanilla to Creamed Shortening and Sugar

Ready to Add the Dry Ingredients

Gradually beat flour mixture in butter mixture.

Stir in:
3 c. Old fashioned or quick oats
1 2/3 c. butterscotch morsels

Ready to Mix Again!

Place 1 T heaps on ungreased cookie sheets. Cook for 7-8 minutes for chewy cookies. 9-10 minutes for crisp.

Ready to Bake

Hot Out of the Oven

Cool and Ready to Eat
